The resident bringing authentic German food to Tooting

Die Bude is Tooting's answer to authentic and competitively priced German food, and you may have not even heard of it yet.
Tooting resident Liam first launched Die Bude (translating into Little Shed) in February this year.
The Tooting Market micro-kitchen serves up frankfurters, currywurst, bratwurst, veganwurst, pretzles and more.
Liam fell in love with Germany and its culture from a young age.
He first experienced the country on a school exchange and has visited countless times since.
"I think it's completely underrated as a country," Liam told Nub News.
"It's got everything. Good food, good beer, and good people."
Liam's worked in hospitality for over thirteen years in pretty much every role imaginable.
Beginning with Kitchen Porter and Chef jobs, he honed his craft and worked his way up to General Manager and Head Chef roles.
Liam continued: "From fast food service to high-end fine dining, I have worked at them all.
"The last few companies I've worked for though have been independents and that's where my passion lies.
"I helped them build their brand and turn their businesses into franchises."
Liam has an impressive track record of helping businesses expand - with one London business in his portfolio now having sites across Dubai and Europe.
For the last three years, Liam had been working as Assistant Manager and Head Chef in Tooting Market at Boom Bap Burger.
When an opportunity appeared to take over one of the Market's sites Liam jumped at the chance.
"I had been looking for a little spot for a while, so when this popped up I had to grab it," Liam told us.
"I knew COVID was going to be a challenge but I don't think we can let that stop us from following our dreams."
The freeing of space coincided with Boom Bap putting him on furlough because of lockdown restrictions.
"It felt like a sign, or at least a very good time to go for it," Liam said.
When eating at Die Bude, you can taste the passion Liam has for Germany in everything off the menu.
All of the ingredients are imported from the country and nothing is rushed for the sake of time.
Liam explained: "Whenever you're working with food you want to be proud of what you're selling.
"No disrespect to some other places, but if you're just frying frozen stuff and selling it, you can't be putting the care and love into your dishes."
The launch of Die Bude was admittedly small due to COVID restrictions but it's been received positively by residents who have visited.
Liam added: "The previous brands I've set up have been able to host launch parties and all these other events.
"I have had to launch and grow this in a different way.
"You have to get out there without getting out there, so to speak."
Die Bude has an exciting future ahead and will soon be selling high-quality beer and expanding its current deli range.
Not to mention that come May 17th Tooting Market will be welcoming diners and drinkers back indoors!
